Easy Soft Crust Apple Cobbler Recipe

Everyone knows that one of the warmest and most welcoming tastes and smells of the Fall and Winter seasons is fresh baked apple cobbler. So with the holidays right around the corner, and family & friends cuddling up for a slightly more quiet holiday season than usual for this 2020 year end--I thought I'd share my Easy Soft Crust Apple Cobbler recipe that never fails to be a crowd pleaser whatever the occasion. 

I began making this delicious recipe in college and finally perfected it through repetition over the years. It can be adapted to be 100% vegan or gluten free if you have dietary restrictions by simply switching out your choice of flour, milk, or natural sweeteners. 

So without further ado, here's what you'll need to make the magic happen:
Ingredients:
1 stick of margarine (or Earth Balance vegan butter)
1 cup self-rising flour
1 cup sugar (organic brown)
1 cup milk (or your favorite plant based milk)
1 tsp cinnamon 
1/2 tsp All-spice
Raw Honey
3-4 lbs pealed raw apples

Preparation Instructions:

Preheat oven at 375 degrees F. Put margarine in a 9x6 baking pan or dish. Place in oven until margarine melts in the bottom of dish. While that's melting, wash, peal, and core your apples; then slice them into medium sized wedges and set aside. (*Tip: if you know you may need a few extra minutes, lightly sprinkle a little lemon over the apple slices to prevent them from browning too quickly.)

Stir together the flour and sugar. Then add the milk all at once. Add in the cinnamon and allspice. Stir just enough to blend. Make sure your butter is spread out evenly across the bottom of the baking dish. Pour half of the batter over the melted butter in the base of the dish. Now arrange apple slices on top of the batter for even coverage.  Add remaining batter spread evenly over the apples. Drizzle raw honey on top of the batter prior to baking.
Bake for about 45 minutes or until lightly browned. Best served warm!

Self-rising flour ingredients:
1 cup flour
1/2 tsp. Aluminum free baking powder
1/8 tsp. sea salt
